All-American Breakfast and Lunch Concept Expands into New Markets through Franchise and Corporate Growth

KANSAS CITY – The Big Biscuit, a modern All-American breakfast and lunch franchise concept known for its classic comfort food served with genuine hometown hospitality, is continuing its strong 2025 growth trajectory while celebrating its 25th anniversary.

Founded in 2000 as a single restaurant in Independence, Missouri, The Big Biscuit has expanded to 29 locations, serving communities across the Midwest and beyond. Most recently, the brand announced a four-unit development agreement in Wichita, Kansas, with the first location slated to open in October and a second in early 2026. The Big Biscuit is also entering the Columbia, Missouri, market through a new franchise agreement, with a restaurant scheduled to debut in spring 2026. Additionally, existing franchisees are continuing to grow their footprints, with new locations in development across Arkansas, Kansas, and Oklahoma.

Beyond new restaurant development, as part of its milestone year, The Big Biscuit rolled out one of its largest menu refreshes to date, featuring new flavorful offerings which include birthday cake pancakes, chicken & waffles, chicken biscuits, grits with unique flavor twists, and a special lineup of cherry beverages. Behind the scenes, franchisees have been equipped with enhanced kitchen systems and streamlined workflows to uphold The Big Biscuit’s hallmark speed-to-table promise—delivering made-to-order meals with fast-casual efficiency in a full-service setting.

Amidst its growth, community service remains a core pillar for The Big Biscuit. The brand is currently hosting its second annual “Stuff the Bus” initiative, collecting new school supplies to support local students and schools ahead of the 2025 school year. Until Sunday, August 17, guests are encouraged to drop off new, unused school supplies at their nearest Big Biscuit location. All donations will be distributed directly to the local school district in each community.
